This is Thailand's grilled street food at its best! Peanut Sauce Mix and Fish Sauce make these tasty satays extra delicious.
Time:
Marinate: 1-2 hours
Grill: 3-4 minutes per side
Yield: 30 satays
Ingredients:
1-3.5 oz. box A Taste of Thai Peanut Sauce Mix
1-13.5 oz. can A Taste of Thai Coconut Milk
1 tablespoon A Taste of Thai Fish Sauce
1 tablespoon fresh lime juice
1 1/2 lbs. boneless, skinless chicken breast, sliced thinly
Optional: chopped cilantro, lime wedges, and chopped peanuts
Directions:
1. Soak skewers in water for 1-2 hours before grilling.
2. Whisk Peanut Sauce Mix, Coconut Milk, Fish Sauce, and lime juice in a bowl. Pour 1 cup Peanut Sauce mixture into a small saucepan and set aside. Place chicken slices into plastic bag and add remaining Peanut Sauce mixture. Squish chicken in bag until all pieces are coated with sauce. Marinate 1-2 hours in refrigerator
3. Just before grilling, bring reserved peanut sauce to a boil, stirring occasionally. Turn down and simmer 2-3 minutes or until slightly thickened. Set aside.
4.Preheat grill to medium-high. Thread chicken onto skewers, discarding chicken marinade. Prior to grilling, rub grill racks with oil for carefree turning of chicken. Grill satays 3-4 minutes on each side or until coked through.
5. Serve cooked satays with a side of warmed peanut sauce, chopped cilantro, lime wedges, and chopped peanuts for the quintessential Thai experience.
